2 minutes, though
preparation could be much longer!

Stuffed capsicum with bacon and mushroom
(cooking time 15 minutes,
Serve 6) Ingredients

3 green capsicums
-
6 oz bacon, finely chopped
-
4 oz mushrooms, sliced
and
lightly fried in butter
-
1 tsp grated onion
-
salt and pepper to taste
-
dried breadcrumbs
-
butter
Method
-
Halve the capsicums lengthwise.
Remove seeds.
-
Mixed together the chopped
bacon, fresh breadcrumbs, fried mushrooms and grated onions.
Season to taste.
-
Divide equally and stuff the
capsicum.
-
Sprinkle with dried breadcrumbs
and top
with a few dots of butter.
-
Bake at 180 C for 15
minutes.
-
Serve with your favorite sauce.

Stuffed
capsicum with meat/prawn/tofu
(cooking time 5 minutes), serve 8
Ingredients : 4 green capsicums, halved,
..seeded
(A)
- 100 g lean pork or beef, minced
finely
- 100 g prawn, shelled and chopped
finely
- 25 g crab meat, shredded
(B)
- salt, sugar, pepper to taste
- 1/2 tsp sesame oil
- 1 tbsp
corn flour
- 1 egg white
(C)
- 2 tbsp
soy sauce
- salt, sugar and pepper to taste
- 4 tbsp chicken stock
- 1/2 tsp sesame oil
- 1 1/2 tbsp
corn flour
- 1 cup water

Stuffed capsicum with meat/prawn/tofu
Method
- Mix ingredients (A) and blend for 8
minutes. Add in (B) and mix thoroughly.
- Divide into 8 portions.
- Sprinkle a little corn flour in each
of the green capsicum.
- Stuff the capsicum with the meat
mixture.
- Heat oil, put in the capsicum, stuffed side down, and fry for 3 minutes or till the meat
mixture is cooked. Pour out the oil.
- Mix (C) and add to wok, stir
continuously
till corn flour thickens.
- Serve hot.
Stuffed capsicum with fish
In this recipe, prawns can be substituted with mackerel meat. Blend the fish in
food processor extra 5 minutes to get smooth fish paste texture, in
exact process like making fish balls.
Stuffed capsicum with crab
Replace the lean meat and prawns with crab meat. There is no need to
blend the crab meat with food processor. Just add extra 2 tbsp corn
flour and mix the ingredients thoroughly.
Stuffed capsicum with tofu
Replace the meat with
tofu or bean curd and mix thoroughly.
