Fried Flat Rice Vermicelli with Beef and Capsicum
(Fried Beef Koay Teow)

 

 

 

 

Ingredients
  1. 600 g flat rice vermicelli
  2. 3 tbsp peanut oil
  3. 400 g beef fillet, marinate with

  • 20 g young ginger
  • 5 cloves garlic, chopped finely
  • 1 big onions, cut into 8 pieces each
  • 1 green capsicum, diced
 

Method

  • Slice beef across grain to get its effective tender texture on cooking. Marinate for 30 minutes.
  • Heat 3 tbsp peanut oil. Add rice vermicelli and fry till golden. Drain oil
    and dish out onto serving tray.
  • Fry garlic, then ginger over low heat till brown and fragrant.
  • Turn to high heat, add beef and fry briskly for 1 minutes, or till beef is just tenderly cooked.
  • Add capsicum and stir fry for 30 seconds.
  • Add the rice vermicelli and fry all together for 1 minute. Serve hot.

Fried flat rice vermicelli with beef and capsicum
(Cook time 7 minutes, serve 4)

This dish is a hot favorite for those who love fried rice vermicelli. Instead of using the hot spicy chili powder, the milder capsicum used. Must be served steaming hot, just fresh from the wok.

To cook soup noodle, a good stock base, usually chicken,
or beef broth, is important.
 

Try substituting with Shanghai noodle:

Blanch the noodle with hot water for 2 minutes.
Drain dry, rinse thoroughly with running tap water. Ready to be stir fried. Bean sprout (1 cup) to be added together with capsicum)
