Exotic pineapple chili chicken

Cooking time 6 minutes, serve 4

 

Exotic Pineapple Chili Chicken

Ingredients

  • 1.5 kg chicken, cut into bite pieces

  • Oil for deep frying

  • 1 tsp ginger, chopped finely

  • 1 tbsp garlic, chopped finely

  • 1 can of pineapple, or fresh

  • 1 green capsicum, sliced

  • 1 red chili, slice

  • 1 big onion, quartered

  • Gravy mixture of:

  • ˝ cup tomato puree

  • ˝ cup soy sauce

  • 1 tbsp honey

  • 1 tbsp vinegar or rice wine

  • ˝ tsp sesame oil

 

 

 

 

Method

  1. Deep fry chicken pieces for 3 minutes, or till just cooked.

  2. Dish out and drain.

  3. Leave behind 2 tbsp  hot oil, sauté ginger and garlic till fragrant.

  4. Add pineapple and capsicum; toss lightly for 1 minute. Remove.

  5. Use 1 tbsp oil, add gravy mixture and bring to boil. Add everything, toss and stir over high heat for 1 minute.

  6. Serve hot.


 

 

 
 
  Ingredients:
1 kg chicken
1 stalk lemon grass
2 kaffir lime leaves
salt and pepper to taste
4 tbsp cooking
 
  Make a paste of :
15 green chilies
5 candlenuts
15 shallots
4 pips garlic
1 cm ginger
1 cm turmeric
Green Curry Chicken
Serve 8 cook time 50 minutes
Method
Heat oil. Fry paste over small fire till fragrant,
takes 10 minutes.
Add chicken, blanch with paste for 5 minutes.
Add 2 cups of water, switch to medium fire and cover.
Cook for 30 minutes, add salt, adjusting fire
or adding water accordingly.

Cook time 25 minutes Serve 5

 
Chicken Yoghurt Supreme
with Chili

 
  • 1.5 kg chicken, chopped into bite pieces

  • Ground mixture of:

  • 2 red chilies

  • 3 pips garlic

  • 1 cm ginger

  • 1 cm turmeric

  • 2 tbsp chili powder

  • 1 cup yoghurt

  • 1 tsp mixed masala spices

  • 1 tbsp soy sauce

  • 1 big onions, finely sliced

  • Salt and pepper to taste

  • 2 cups water
     

 

Method

  1. Heat oil and lightly brown the onion slices.

  2. Add paste, fry for 1 minute. Add chili powder, fry for 1 minute.

  3. Add chicken and stir till the pieces are evenly coated with paste, takes
    2 minutes.

  4. Add water and simmer for about 20 minutes, or till just cooked.

  5. Add yoghurt, masala spices, soy sauce and continue till gravy thickens.

  6. Finally add capsicum.

  7. Garnish and serve hot.

Increasing Chili Yield

Make sure the plant is healthy by manuring frequently, maybe once a fortnight.
As an alternative to inorganic fertilizers, garden wastes could be used. They
can be withered leaves, grass, dead snails, prawn shelves and food remnants.

Dig circular tunnels around the roots, put in the garden wastes, then bury them with soil. Make sure not to hurt the roots whilst digging the tunnels. Constantly replenish the tunnel with new wastes to ensure good supply of nutrients to the plants. Read more
