Why is chili fast gaining popularity in culinary

 

To date 1/4 of the population of the world consumes chili everyday. The chili had long been used in Mexican cuisine, before it was even introduced into tropical Asia.


The first European to "discover" Chili  was
Christopher Columbus in America in 1493. Within a century, chili peppers' popularity had spread worldwide.

Chili has now become an integral part of food in countries like Mexico, Italy, the West Indies,  Malaysia, Indonesia, Thailand, Szechwan and Hunan in China, India, Bangladesh, Korea, Vietnam and Burma. Rate of chili consumption is ever on the rise!  


There are many reasons


Chili is a great spice, a wonderful food enhancer, an indispensable condiment, a tantalizing culinary and a health dish by itself.
Chiles are the second most common spices in the world, following salt.
 

Though a first timer may need an initial courage to overcome the ‘bite’ of capsaicin; once the fear is conquered, the capsaicin tolerance level will be increasingly lowered. There will come a day when he finds a meal without chili, tasteless! This addiction to chili is a very common habit among chili eaters.


Capsaicin in chili stimulates the flow of saliva and gastric secretions, thus increases one’s appetite.

 

Capsaicin stimulates the brain to excrete endorphin and gives a sense of pleasure when ingested. This is the reason people get addicted to chili. This also explains the ever increasing number of chili consumers in the world.

The hotness level of a chili does not decrease easily with heating and time, thus making it quite effortless in retaining its original characteristic taste. Moreover, fresh and dried chili peppers are available whole year round.

  chilies can be sold as spices: in dried and in powdered form. This offers a great advantage of ready availability.

like curry, chili fried noodle, chili Thai tom yam soup, Korean kimchi (pickled chili salad), chili fried rice, chili sauces for salads…etc.

 

Chilies are also sold as processed products: These are varied and multiple. Most of them are attractively packed to arouse your taste buds. The common ones are pickled chili, chili sauce, salsa sauce, tabasco sauce.      



Chili pastes
