Grilled sea bass with creamy sauce

Cooking time 10 minutes, serve 5

Ingredients

  • 500 g sea bass slices

  • 1 tsp lime juice

  • lettuce, tomato, cucumber for garnishing

Mix the following

  • ¼ cup yoghurt

  • 1 tsp chili powder

  • 1 tsp curry powder for fish

  • ½ tsp turmeric powder

  • ½ tsp tomato puree

  • 1 tsp black pepper


To grind separately

  • 4 pips garlic

  • 1 medium onion

  • 1 cm ginger

 

Method

  1. Marinate sea bass slices with lime juice, salt
    and pepper for 30 minutes.

  2. Grill sea bass till just cooked. Dish out and place on serving plate.

  3. Meanwhile, fry ground garlic and onion till fragrant. Add ground ginger, the yoghurt mixture and mix well.

  4. Pour sauce over fish.

  5. Garnish and serve hot.

 

 

Fish in chili gravy or sambal fish

ooking time 12 minutes, serve 5
Ingredients
  • 3 tbsp peanut oil
  • 10 mackerel fish
  • 1 cup of coconut milk 
  • 2 cm young ginger, pounded
  • 20 shallots, pounded finely
  • 2 pips garlic
  • 2 kaffir lime leaves, pounded
  • salt and sugar to taste

Method

  1. Steam fish. Let cool. Scrape out fish meat, pound finely and set aside.
    Heat oil in a wok. Add in pounded ingredients.
  2. Fry over low heat till aromatic. Add
    fish meat and mix well.
  3. Heat coconut milk till boils.
  4. Add fish mixture, salt and sugar.
  5. Cook and stir well till golden.
  6. Serve with rice, flat rice vermicelli or noodle.
 

 

 

 

 

 

 

 

 

 

Charbroiled Fish with Banana Leaf
Grill time 10 minutes per fish serve 6
 

Ingredients:
800 g mackerel fish
and banana leaf
 
(A) Ground ingredients:
  • 8 dried chili
  • 10 shallots
  • 2 pips garlic
  • 1/2 cm turmeric
  • 1/2 cm ginger
  • 4 candlenuts
  • 30 g grated coconut

Method

  1. Mix all ingredients well. Set aside.
  2. Warm the banana leaf to soften it.
  3. Place 1/2 of the mixture on the banana leaf.
  4. Place the mackerel on it.
  5. Add the remaining mixture on the fish.
  6. Wrap whole, and roast on charcoal fire,
    turn alternately for 5-10 minutes till aromatic.
  7. Serve hot with chili sauce.

Salted fish head curry

(Cooking time 15-20 minutes, serve 5)

Ingredients

1 salted fish head
400 g shelled prawns,
2 tomato, halved
4 long beans, sliced 3 cm
5 ladies' fingers
2 round eggplants, cut into 4
1 sweet potato, cut into 8
1 pineapple, cut into pieces
10 green chili, halved
2 slices of
tamarind
2 stalks
lemon grass
some curry leaves
 

5 tbsp curry powder
1 bowl of
coconut milk
from 1 coconut
salt and sugar to taste


Pound the following spices:

1 tsp fennel seeds

1 tsp mustard seeds

20 shallots

1 small piece ginger

3 pips garlic

 

Method

  1. Cut the salted fish head into big pieces, soak in water to get rid of impurities and preservatives
  2. Heat 5 tbsp cooking oil. Fry ground spices
    and fry till fragrant.
  3. Add crushed lemon grass, curry leaves, curry powder and 1/2 of coconut milk.
  4. Add fennel seeds and mustard seeds. Stir well.
  5. Add tamarind slices, salted-fish head, then vegetables. Cook for about 10 minutes.
  6. Pour in the remaining coconut milk. Add prawns. Bring to boil. Serve hot with rice
