Salmon Salad

Ingredients
|
| 300g salmon - diced |
| dices of red,
green and yellow capsicums |
| cucumber slices,
|
| ginger slices |
| 1/2 egg white |
| garlic slices |
| 1 tsp corn flour
|
| 2 tsp soup stock |
| 2 tsp sherry or
Chinese wine |
| 3 tbsp cooking
coil |
| salt and sugar to
taste |

Method
(Cook time - 3 to 5 minutes) |
| Marinate salmon
dices with egg white, wine, 1 tbsp oil and
corn flour for 10 minutes. |
| Heat remaining
oil, add salmon and stir fry briskly over
medium heat till 70% cooked. Drain oil and
dish out. |
| Add in garlic,
ginger, capsicum, cucumber and stir fry
briskly. Do not over-cook. |
| Add salt, wine,
sugar, soup, then salmon and stir fry to mix
well. |
| Garnish with lemon
slices. |
| Serve immediately
to enjoy the juiciness and freshness of
salmon. |
