Croquettes and Fritters

Most of us love deep-fried food, for example, fritters and croquettes. This method produces food that are steaming hot, crispy, crunchy and tasty.

If done properly, the pieces do not absorb excess oil. Placing the croquettes or fritters on absorbent base will further reduce oil absorbed. Best suitable for seafood, vegetables and chicken..

 Sizzling oil for deep frying chicken 


 

           Mozzarella in carozza
           Cooking time 5 minutes
  Ingredients
  • 8 slices white bread (crust removed)
  • 4 thin slices of Mozzarella cheese
  • 100 g plain flour
  • 2 eggs, ½ tsp chili powder and salt
    beaten lightly
  • 200 ml cooking oil
  Method

Butter two bread slices, put a slice of cheese in between, sprinkled with chili powder.
Cut each bread into halves.
Lightly dredge each  in flour, dip in beaten egg mixture, and coat with flour again.
Fry in hot oil till golden.
Serve hot.

 

 

How to cook crispy and juicy fritters

In the cooking of most fritters and
croquettes, the deep fry method is engaged. There are
certain rules to be observed in order to get the best results.
First requirement is the oil temperature, which must be steamy hot before foodstuff is added into the oil. Normally temperature should be around 350 C.

A convenient way would be to slightly dip something, a fork,
a chopstick, or a vegetable into the oil. Presence of tiny bubbles around them would indicate that the oil is ready.

Deep fry method preserve the freshness
of the meat by forming a film that seals off the surface
of the meat. This makes the foodstuff juicy and succulent, and steaming hot.

If the oil is not hot enough, then there will not be an effective sealant film. The oil may thus sip into the food, making it unhealthy, soggy and uninviting.

Other requirements being the method of frying. Great care must be taken not to overcook, or the food may lose its juiciness. Duration of fry should be optimum. Too soon
may undercook and too long may overcook.

Make your own judgment through practice and experience.
