In Italian cuisine, an antipasto is the equivalent of
hors d'oeuvre, meaning “before the meal” . This may  consists of savory cold food such as cheeses
and raw or marinated vegetables, or cold cuts and cured meats.

You may want to try this antipasto which is essentially salad base with pepper as one of the
main ingredients:

Peperonata Italia -
Stewed peppers with tomatoes

cooking time 30 minutes, serve 6
Ingredients

  • 5 tbsp olive oil for frying
  • 1 large onion, diced
  • 1 clove garlic, sliced
  • 5 bay leaves
  • 500 g red peppers, diced
  • 500 g green peppers, diced
  • seasoning: salt, pepper,
  • 750 g tomatoes, peeled and quartered

Method

  1. Fry onion, garlic and bay leaves over
    moderate heat till golden.
  2. Add red peppers and green peppers, seasoning, continue for 10 minutes.
  3. Add tomatoes, reduce heat and simmer till peppers and tomatoes are tender but firm.
  4. Dish out and serve hot, as an
    accompaniment to stewed chicken, or
  5. Serve cold, as an antipasto.
 
 

Green tomato pickle             
Make 35 jars, Cooking 30 minutes

Ingredients

  • 5 kg green tomatoes, sliced
  • 4.5 liters vinegar
  • 2 kg sugar
  • 18 onions, sliced
  • 18 green peppers, sliced
  • 3 tbsp mustard, French style
  • 2 tbsp ginger, allspice and turmeric
  • handful celery seed, mustard seed and whole cloves

Method

  1. Sprinkle the sliced vegetables with salt. Let stand 60 minutes. Drain.
  2. Cook in half of vinegar till boils.
  3. Pour off that vinegar and add sugar and spices to other half of vinegar.
  4. Put in tomatoes, onions and peppers and cook until tender.
  5. Make between 36 - 40 half pint jars.

Spicy fry macaroni or spaghetti

Cooking time 20 minutes, serve 4

Ingredients

  • 300 g macaroni or spaghetti

  • 100 g fresh shrimps, peeled or

  • 100 g chicken meat or beef

  • 1 cup bean sprouts or shredded carrots or cabbage

  • 2 stalks green vegetables

  • 1 red chili, sliced

  • 1 big onion, sliced

  • 1 tbsp chopped garlic

  • 2 tbsp peanut oil

Gravy:

 Method

  1. Prepare the macaroni or spaghetti
    the usual way.

  2. Sauté garlic till fragrant.

  3. Add onion, meat and vegetable
    and fry for another 3 minutes..

  4. Add macaroni or spaghetti, fry
    over high heat and mix well.

  5. Add gravy, bring to boil.

  6. Add the bean sprouts. Serve hot.
