Birthday Noodle for Longevity
To Asians, noodle, apart from rice, constitutes a staple diet too. To the Chinese, under all circumstances, noodle, be it fried, braised, or soup, must be long.

Fried Birthday noodle for Longevity blessings
Noodle symbolizes long live!. It is indispensable in 
Chinese birthday celebration.

(Serve 8; cook time 5 minutes)

Longevity noodle to celebrate your birthday
Ingredient:
  • 500 g wheat noodle, or Hong Kong noodle, blanched and drained dry. refer to
    pre-cooked
    noodle preparation.
  • 3 tbsp cooking oil
  • 2 dry mushrooms, pre-soaked overnight, or
  • 8 button mushrooms, sliced
  • 3 stalks spring onion, cut
  • 200 g beef, sliced across grains, marinated with 2 tbsp soy sauce, 1 tsp corn flour and pepper
  • 1 carrot, shredded
  • 1/2 capsicum, sliced
  • bean sprout, variable
  • 1/2 cup chicken soup broth
  • 2 tbsp soy sauce
  • salt and pepper to taste
  • 4 pips garlic, chopped
  • 5 shallots, chopped
Method
  1. Heat oil. Add onion, then garlic, then mushroom, fry till fragrant over low heat.
  2. Add carrot, fry for 30 seconds.
  3. Switch to high heat, add beef, stir fry
    briskly for 1 minute. Dish out.
  4. Boil chicken soup in the wok.
  5. Add noodle, stir fry briskly for less than
    1 minute.
  6. Add every other ingredients, including salt, pepper and soy sauce; stir and mix well,
    but taking care not the break or cut the noodle strands short
  7. Switch of fire. By now, the noodle
    should be dry and ready to be served.
  8. Serve with chili sauce.
  9. Chili sauces greatly enhance the noodle taste.

Birthday soup noodle for longevity blessings
(serve 8, cook time 60 minutes)

Ingredients:

  • 200 g shrimps, shelled (keep shell for soup stock)
  • 400 g chicken breast meat
  • 200 g belly pork
  • 1.5 liter water
  • 400 g yellow wheat noodle, blanched
  • 1 tablespoon cooking oil
  • salt and pepper to taste
  • 3 cloves garlic, peeled and minced
  • 2 tbsp of corn flour in 1/2 cup of water as corn flour mixture
  • 1 tablespoon light soy sauce
Garnishing: Method: How good is this dish depends on how good
is the soup broth. Preparation of soup broth :
  1. Heat 1 tbsp cooking oil.
  2. Sauté garlic and prawn shells till fragrant.
  3. Add water till boil. Add chicken and pork meat, simmer for 20 minutes. Dish out the belly pork,
    but continue to simmer the soup stock for
    another 30 minutes. Sieve.
    Add
    corn flour mixture to thicken the soup
  4. Add salt, pepper and soy sauce.
  5. Slice thinly the pork, sauté for better aroma.
  6. Sauté prawns to be used for garnishing.
To serve:
  1. In a deep serving plate or bowl, place 1 handful of noodle at the bottom.
  2. Top with garnishing: bean sprout, chili, cilantro, shrimps, pork, fried shallots.
  3. Add soup just enough to cover all.
  4. Serve hot with chili sauce, sambal belacan
