Heat oil. Add shallots and garlic and fry till
golden or fragrant.
Add chicken meat, fry for 2 minutes, or till
just cooked.
Add shrimps and then chili powder, stir
briskly for 1 minute.
Add rice, fry for 4 minutes, till all grains
are fully cooked.
Dish out. Add egg to wok, forming a full
circle, till semi cooked.
Pour back fried rice, stir and mix thoroughly.
Add seasoning and fry for another 1 minutes.
Serve hot.
Garnish with shredded chili and fried
shallots.
