       Blue Rice with Chili (Kerabu Rice)


       Have you heard of or seen blue rice? It is natural

(Cooking time 15 minutes, serve 4)

     

 

Ingredients

  • 300 g mackerel fish

  • 1/2 tsp chili powder

  • salt, white pepper, black pepper to taste

  • 2 tbsp soy sauce

  • 3 cups cooked blue rice, let cool

  • 8 shallots, sliced

  • 4 tbsp roasted coconut flakes

  • 4 long bean, sliced thinly cross-section-wise

  • 1 cup bean sprouts

  • 1 cucumber, sliced and shred lengthwise

  • 2 stalks of sliced ulam (salad) leaves, may be substituted with basil, mint or ulam raja leaves

  • 1 stalk wild ginger flower, sliced finely

  • 1 stalk of lemon grass, cut thinly cross-section-wise

  • 4 kaffir lime leaves, sliced

Method

  1. Steam mackerel fish, remove bones. Mix with chili powder and 1/2 tsp salt and fry dry over low heat.

  2. Mix the white rice with salt, white pepper, black pepper and soy sauce.

  3. Place mixed rice on the plate, surround it with all sliced ingredients.

  4. Mix all on serving.

Pineapple Pepper Fried Rice

Pineapple pepper fried rice


Just the presentation is tantalizing enough,
what more with its irresistible pineapple aroma? 
(
Cooking time 10 minutes, serve 4)

Ingredients

  • 3 tbsp peanut oil
  • 2 tbsp chopped garlic
  • 4 French beans, sliced obliquely
  • 2 fresh red chilies, shredded
  • 1 capsicum, shredded
  • 300 g cooked rice at room temperature
  • 2 eggs, lightly beaten
  • 1 cup shredded pineapple
  • soy sauce, salt and pepper to taste
  • 30 g roasted almond flakes
  • 100 g roasted pine nuts
Method
  1. Heat oil. Fry garlic till fragrant
  2. Add French beans and rice, continue frying over medium - high heat for 3 minutes
  3. Make a hole, about 20 cm in diameter in the centre of rice. Add egg, cook for
    1 minute, then stir in the rice from all sides
  4. Add pineapple shreds. Add seasoning.
    Mix thoroughly for 30 seconds.
  5. Dish out. Garnish with nuts, chilies and
    capsicum. Serve hot.
