Fragrant rice

| Fragrant rice with a plethora of leaves and
roots |
Cooking time: 40 minutes, serve 3
Ingredients and method

2 cups of cooked rice
-
Cut finely any type of leaves or roots:
Suggestion: one
leaf each of mint, basil, oregano,
lemon grass;
curry leave, ginger
leaf, turmeric leaf

Ginger root, shallot, garlic
-
50 g of cooked fish
-
50 g of cooked shrimps
-
2 green chilies, chopped
-
2 tbsp of
thick coconut milk, or yoghurt
-
1 tsp of cooking oil or olive oil
-
Soy sauce, salt and pepper to taste
Mix the warm rice with all the ingredients.
Serve by itself or otherwise.

delights
Ingredients
- 250 g chicken meat, diced
- 3 water chestnuts, chopped
- 1 stalk spring onion, shopped
- 1 tsp fresh ginger, finely ground
- 20 g dried shrimps, soaked and drained
- 1 ˝ cup glutinous rice, soaked for
2 hours and
drained
- 3 chilies for garnishing or added taste
Seasoning
Method
- Mixed all ingredients, except the
rice.
- Knead lightly to form a smooth paste.
- Roll into 20 balls.
- Spread glutinous rice on a plate, and roll
each ball in rice till thickly coated.
- Arrange in a lightly oiled plate and steam
over boiling water for 40 minutes till rice
is transparent and well
cooked.
- Garnish with mint leaves and chili.
To cook rice without using rice cooker
This method of cooking rice has an advantage over
the fire method. The rice will not get
burnt. The disadvantage is that it is not
so effective for cooking big amount of rice.
Put rice in a bowl. Add water just enough to cover the rice, or 2 part
of rice to 1 part of water. This method needs less water
than the normal rice cooker way as steam will be added to the rice
during steaming.
Steam the rice over
high heat for 30 minutes. Let stand for 30 minutes to allow the whole
rice to get
fully cooked.
