salad)

Stir fry salad
for health and capsicums for luring effect
Marinate the cut pieces of 300 g chicken
with 2 tbsp
corn flour and soy sauce to taste. Stir fry the
chicken over high heat for 2 minutes. Dish out.
Stir fry vegetables
for 1 - 2 minutes. Add chicken. Add 2 tbsp of
soy sauce,
salt and pepper to taste. Stir and mix all briskly for 30 seconds.
Dish is ready to be served! Quick and easy, yet tasty.

Chilies serve many functions.
Besides being used as ingredient, they are used for decorative purposes,
to add colors to the dish.
Chilies
are preferred as
they can be briskly stir fried, without altering
much, the taste of the main dish.
They are widely used in salads too for their
nutritional values. Besides, they are popularly used
in slimming diets. |
Secret of
getting a tender dried mushroom preparation:
Soak the dry
mushroom in warm water, changing water a few times. Keep
overnight. Squeeze out the water from the mushrooms. Cut off
the stalks.
Cut into smaller pieces, Marinate with 1 tbsp of soy sauce
and stash of sugar.
Heat oil.
Stir fry
the cut mushrooms over slow-medium fire for about 2 minutes.
Dish out and set aside. You will love the aroma and the feel of
the mushrooms prepared this way.
In Chinese cooking,
corn flour is a must.
It is a wonderful tenderizer, especially useful for meat,
minus the chemical risk factor. It can be used in two ways:
One way is to add
directly to meat, usually 2 tbsp of corn flour to 500 g of meat. This
effectively seals the meat surface, thus preventing the loss of meat
juices from the
cut meat. In doing so, the juiciness and the succulence
of the meat is attained.
Another way is to makethe corn flour
mixture:
Usually 2 tbsp of corn flour is added to 1
cup of water, together with some seasoning like salt, pepper, tomato
puree or chili sauce.
The corn flour mixture
is then added to food; either meat, vegetable, or noodles; and bring to
boil and switch off the
fire immediately. This thickens and magically smoothens, giving the much
desired tenderizing effect.
It is effective.

Soy sauce is made from soy beans
added with salt.
It thus gives a sweet and yet salty base. It magically substitutes the
function of meat and salt in salad preparation. Salad tastes delicious
with it.
Try stir-frying
lettuce or cabbage with this
combination.
Try it:
stir fry
mushroom, French beans, cabbage,
carrot, capsicum, tofu with soy sauce.

Simple stir fry Brussels
sprouts
with
soy sauce as the main taste enhancer

Since this variety of
sprout needs longer time to get
cooked, the correct way is to
blanch
it in boiling water
(with few drops of oil) for 2 minutes. Drain dry.
Add to hot oil in wok and
stir
fry for 1 minute. Add corn starch
mixture, bring to boil. Serve hot.
