Pineapple salad with coconut salsa |
 |
Ingredients: chicken breast meat, cooked
and diced.Coconut salsa: Mix all
ingredients and chill for for 30 minutes.
- 1 can pineapple
- 1 red capsicum, cubed
- lettuce
- 2 tbsp unsweetened coconut, toasted
- 2 tbsp lime juice
- 1 carrot, chopped
- 1 tomato, chopped
- choice nuts, peanut or cashew nut
- 1/2 tsp minced jalapeņo pepper,
optional
- salt and pepper to taste
It is a delicious concoction of chicken
meat with fruits, mainly pineapple and
vegetables, and coconut salsa, with your
choice nuts.

Salad vermicelli
Vietnamese style |

Ingredients: As per serving:

1. 150 g of rice vermicelli |
| Soak the dry rice
vermicelli in cold water for 5 minutes.
|
Drain away the
water and boil in hot water for 1 minute.
Drain and rinse in running tap water. This
method prevents the strands from sticking
together. Add a few drops of olive oil to
enhance the smoothness. |
2. Cucumber,
lettuce, mint leaves, variable. Chilled.
3. Salad dressing: Mix the following:
1 Cayenne chili, chopped, 1/4
tsp garlic juice,
1 tsp palm sugar or honey, 2 tbsp lime
juice, 1/2 tsp balsamic sauce, few drops of
olive oil. Served chilled. |
If you prefer the warmer version, then
prepared the vermicelli last. Blanch the
prepared vermicelli with hot water just
before serving.
