Chinese Stir Fry Quick and Easy

Stir fry bacon with mushroom
Serve 4, cook time 2 minutes

Stir fry bacon with mushroom

Ingredients

  • 200 g bacon, cut into strips
  • 200 g mushroom, halved
  • 1/2 red and green capsicums,
    cut into strips
  • 3 pips garlic, shopped finely
  • 2 tbsp soy sauce
  • salt and pepper to taste
  • 2 tbsp cooking oil
  • 1 tbsp rice wine or dry white sherry

Method

  1. Heat oil, fry garlic till fragrant.
  2. Fry lightly, over medium to high heat, in sequence: mushroom, bacon, capsicums, each for 30 seconds.
  3. Finally add soy sauce, wine, salt and pepper, stir fry briskly for 10 seconds,
    switch off.
  4. Serve hot. Simple and delicious.


 

Salad with chicken and nuts
Serve 4 cook time 2 minutes
Ingredients
  • 300 g chicken meat, diced, dredge with
    (A): 1 egg-white, 1/2 tbsp corn flour,
    salt and pepper to taste)
  • 150 g roasted cashew nut.
  • 1 capsicum, diced
  • some diced spring onion
  • 1 chili, cut into strips
  • 2 tbsp cooking oil
  • (B): 1 tsp corn flour, water 2 tbsp,
    2 drops of sesame oil, 2 tbsp soy sauce, salt and pepper to taste.

       Salad with chicken and nuts

Method
  1. Heat 1 tbsp cooking oil till hot.
  2. Add chicken dices and stir fry briskly
    for 1 minute. Dish out.
  3. Heat another 1 tbsp oil, add cashew nuts, capsicum, chili, spring onion and stir fry vigorously for 30 seconds.
  4. Add (B) till boils, stir in chicken meat
    for 30 seconds. Serve hot.

 

 

 

 

 
 

Stir fry mustard with chili
The main attraction here is the luring effect of the colorful presentation.
Serve 2, cook time 3 minutes

Stir fry mustard with chili

Ingredients:
  • 300 g mustard stems (discard the leafy part),
    and cut into slanting segments
  • 3 pips garlic, chopped
  • 2 tbsp soy sauce
  • 1 red cayenne, cut into slanting strips

Method:

  1. Boil a pot of water, add 1 tsp cooking oil.
    Add the mustard stems and oil for 1 minute. Sieve away the water and rinse generously
    with running tap water. Drain dry and
    set aside.This is called
    blanching.
  2. Heat oil, fry garlic over till fragrant,
    over medium flame.
  3. Add the blanched mustard and stir fry vigorously for 1 minute.
  4. Add cut chili, add soy sauce and stir well, for 30 seconds. Switch off, dish out and serve hot.

sssSSH....Grandma said: Though this recipe does not use shrimps for enhancing the taste, the soy sauce is a very good substitute. You will not be disappointed with the outcome.

 

Stir fry cabbage
(Serve 2, cook time, 2 minutes)

This recipe was presented to me by a Melbourne University student during her study years. She wanted was
a quick and easy, yet tasty cabbage recipe.
So here she did, took her 2 minutes to cook the dish. Surprisingly simple and superbly delicious, that was her comment. She highly recommends this to novice chef!

Stir fry cabbage
Ingredients
        300 g cabbage, cut into strips
        100 g shrimps, shelled and marinated with
         1/2  tsp sugar
         2 tbsp cooking oil
         2 tbsp soy sauce
         3 pips garlic, chopped finely

Method:

  1. Heat oil in a wok or pan. Add garlic and fry till
      fragrant over medium flame.
  2. Add shrimps and briskly stir fry for 30 sec.
  3. Dish out but leave the fragrant oil in the wok.
  4. Add cabbage stir fry over high flame for 1 minute.
  5. Add the shrimps and garlic, add soy sauce.
  6. Stir once or twice, switch off. Serve hot.

sssSSH....Grandma said: If you do not have shrimps in hand, just add the soy sauce, together with a little extra of salt. You will be surprised with the taste and flavor of this simple dish.
