Stir fry shrimp with
sweet and sour sauce

Ingredients:
400 g shrimps, shelled and marinated with (A)
(A) 1/2 tsp Chinese rice wine
1 egg white, 2 tbsp corn flour
(B) 1 yolk, 1 tbsp
corn flour
(C) 1/2 tbsp each of chopped chili, capsicum,
garlic, ginger, spring onion
(D) corn flour mixture of 1 tbsp corn flour, 3
tbsp water, salt, sugar and pepper to taste,
1
tbsp tomato sauce, 1 tbsp vinegar
Method
Dip the marinated shrimps in egg yolk, then
dredge them with
corn flour.
Heat 2 cups of oil for deep frying till just
fumes.
Deep fry shrimps for 1 minute, or the shrimps
just turn pink.
Dish out, drain and place on serving plate.
Leave only 2 tbsp hot oil, fry (C) till
fragrant.
Add (D) till thickens or turn transparent.
Pour over shrimps and serve immediately.

Golden shrimp
balls

balls cook time 1 - 2 minutes per ball

Ingredients
Mix the following together and roll into 12
balls:
500 g shrimps, shelled, diced
8 water chestnuts, chopped
1/2 cup onions, chopped finely
2 tbsp corn flour
2 chilies, chopped finely
1 t Chinese rice wine,
1/2 t sesame oil
1 tbsp
soy sauce
salt and pepper to taste
2 egg white, beat till frothy
1 cup bread crumbs

Method
Roll each shrimp ball briskly in egg white. Subsequently roll each in bread crumbs.
Heat enough oil for deep frying, till oil
starts to fume.
Fry each ball for about 1 - 2 minutes till
golden.
Dish out and drain the oil thoroughly. Let cool down a bit and serve while still
warm.

Optimum temperature control is very
important. Oil temperature should be
medium-high. Shrimp balls will absorb excessive oil at
low temperature. Of course, everybody knows what will happen
at too high temperature!!
You may end up eating charcoal !

Chili is
always a fantastic
taste enhancer
to seafood. Prawn or meat marinated
with salt will toughen on
cooking. Rather, sugar is used.
The sugar coating acts as a sealant to prevent juice
drained from the prawn itself. Thus on cooking, it will be
juicy. The juiciness also gives the prawn the much desired
succulent feel.
In addition,
the sugar, in very slight amount, adds flavor to the prawn.
For 500 g of seafood; add 1
tsp of chili powder,
1 tsp of sugar, 2 tbsp of
soy
sauce, Marinate for 5 minutes.
Stir fry over very
high heat for 2
min.

Ingredients

600 g big prawns, shelled
except for the tail

1 tbsp chopped garlic
-
1 tsp chopped ginger
-
Sweet and sour sauce (or tomato sauce
with lime juice and sugar)

Rice wine
or white wine (optional)

1 tsp oil
-
1 cup water mixed with the following:
-
˝ cup tomato sauce
-
1 tbsp chili sauce
-
2 tbsp lime juice or vinegar
-
1 tbsp
soy sauce
-
Salt and pepper to taste

Slice the shelled prawn, lengthwise,
till the tail. Dap with stash of sugar.

Heat oil,
stir fry shrimp for 1 minute
or till just cooked. Drain and dish out.

Sauté garlic and ginger till fragrant.
-
Add the sauce, bring to boil.
-
Pour over the prawns. Garnish with greens or pickled papaya. Serve hot.
