Shrimp curry ( Prawn sambal )
(Cooking time 6 minutes, serve 3)


Prawn in chili gravy (prawn sambal)

 

Ingredients
300 g shelled prawn marinated with dash of sugar 
 
3 tbsp corn oil
Pound together (A)

  • 6 shallots
  • 2 pips garlic
  • 30 g ginger
(B) 
  • 3 tbsp water
  • 3 tbsp chili sauce
  • 2 tbsp tomato ketchup
  • 3 tbsp soy sauce
Method
  1. Heat oil, add (A), stir over low heat till light brown.
  2. Add prawn and fry over high heat for one minute.
  3. Add (B) and bring to boil.
  4. Garnish with cucumber, celery, or pineapple.
  5. Serve hot with rice.
  6. Serve hot with vermicelli, noodle, spaghetti or bread.

Ingredients

  • 3 tbsp corn oil
  • 10 dried chilies, cut into 3 cm sections
  • 4 shallots, sliced
  • 30 g young ginger, minced
  • 500 g shelled prawn
  • 1 big onions, cut into 8
  • 1 capsicum, diced

Method

  1. Heat oil in wok, fry dried chilies, shallots and ginger over low heat till fragrant.
  2. Add prawn and fry briskly over high heat, take care not to over-cook them. Dish out and set aside.
  3. Add big onions and (A). Simmer till thickens, add capsicum.
  4. Add in prawns. Stir fry briskly. Serve hot.
