The secrets of cooking a delicious, tasty and sumptuous soup

To have a delicious soup, one needs to really spend some time
to get a good soup stock, normally a
chicken base soup.
An equally popular soup base is the beef soup
.
 

For a 2 liter soup, you will need 800g chicken breast meat.
It is the leanest part of chicken. You also need 300 g of
Chinese ham or bacon from Yunnan, 3 big onions, 2 potatoes, and 2 tomatoes, cubed. They enhance the richness and the taste of soup.

Add chicken meat, ham, onion, potato, tomato cubes to boiling water.
Let boil at high heat for 3 minutes. Turn to medium for another 3 minutes. Finally, turn to low heat and simmer for another 60 minutes. Sieve away the remnants to get a clear soup. base.

Cook time 30 minutes Serve 4
Ingredients:
This is the vegetable soup.
Basically add cut vegetables
to the
chicken soup base.

Use cabbage, onion, tomato, red and green capsicum, leek,
broccoli, cauliflower and any
of your favorite vegetables.

Method

Boil at high heat for 3 minutes,
then reduce to medium flame
for another 20 minutes.

Switch off fire. Add seasoning; Italian herbs, oregano, thyme,
spring onion, of your choice.
Add salt and pepper to taste.

For Chinese soup, add soy sauce!

  Cook time 30 minutes Serve 4
Ingredients A
  • 1 liter chicken soup base
  •  2 pip garlic
  • 2 big onions
  • 1 green jalapeno
  • 1 carrot
  • 1 stem celery
  • 1 tsp of cumin, coriander
  • 1 corn

Ingredients B

  • sweet corn grains together
    with roasted red bell peppers, cilantro and cayenne.

Method

  1. Simmer the above for
    20 minutes.
  2. Let cool to room temperature. Puree.
  3. Stir in B. Cool to 5C
    for serving.

Ingredients
  • I big onion, chopped
  • 1 pip garlic, chopped
  • 1 carrot, chopped
  • 1 large turnip, chopped
  • 1 red cayenne, chopped
  • fresh coriander, chopped
  • 1 tbsp olive oil
  • 1 liter chicken soup base
  • feta cheese for garnish
  • salt and pepper to taste

Method

  1. Fry onion, garlic and chili in olive oil until fragrant.
  2. Add turnip and carrot,
    cook for 15 minutes.
  3. Blend the soup.
  4. Add coriander, salt, and pepper.
  5. Garnish with feta cheese.
  Cook time 30 minutes Serve 4

Ingredients :

  • 1 liter chicken base soup
  • 1 tomyam cube or
  • 1 tsp chili powder
  • 1/2 red capsicum
  • 1/2 green capsicum
  • bean sprout, optional
  • 2 tbsp coconut milk or evaporated milk
  • 1 tbsp soy sauce
  • 2 pieces tofu, cubed

Method

  1. Heat chicken soup.
  2. Add tofu, let boil for
    2 minutes.
  3. Add coconut milk,
    bean sprout and
    boil for 1 minute.
  4. Add capsicums for garnishing.
