Tofu with minced meat
Cook minced meat the chili con carne way. Add
tofu, stir for 20 sec. Garnish with spring onion or chili.

Tofu is an essential food in the Chinese
and
Japanese diet.
Tofu or bean curd is made of soya milk, added
with small amount of phosphate,
and steamed till the mixture
coagulates into a solid. It is then cooled and known as tofu.
Thus, tofu is edible even prior to subsequent cooking.
Tofu recipes are essentially simple to prepare, yet very tasty.
Cooking time should be short so as to preserve the nutrition.
It is popular due to its nutritional values too. Tofu
is cholesterol-free, low in calories, saturated fat; and high in
protein and calcium.
Soybeans are rich in isoflavones, which helps prevent heart
diseases and certain cancers, like breast cancer...
A research, led by Charles Wood from the Wake Forest
University Baptist Medical Center, has this finding:
"For
women at increased risk of breast cancer due to higher oestrogen
levels, a diet rich in soy isoflavones may offer a modest
breast-protective effect," he said.

Tofu sweet and sour

Ingredients |

2 square soft tofu |
| |
200 g minced pork |
| A |
1 tsp
chopped garlic |
| |
1 tsp chopped ginger |
| |
1 tbsp chopped spring onion |
| B |
1/2 cup water |
| |
1 tsp chili sauce |
| |
1/2 tsp tomato sauce |
| C |
1 tsp
corn flour |
| |
1 tbsp water |
| |
pepper to taste |
| |
2 tbsp
soy sauce |
Method
- Heat 1 tbsp oil. Fry A till fragrant. 1 minute.
- Add minced meat. Fry till fragrant. 1 minute.
- Add B and simmer for 2 minutes.
- Add bean curd squares, simmer for 1 minute.
- Add C,
the corn flour mixture,
to thicken.
It only takes 1 minute.
- Switch off fire. Dish out for serving.
- Garnish with spring onion and chili.
Signature tofu
Serve 4, cook time 25 minutes

75 g fish meat |

1 egg white |

1/4 tsp sesame oil |

1 red chili, chopped finely |

4 walnuts, finely chopped |

2 slices ham, chopped |

1 egg white and 1 tsp corn flour, mixed |
Method
- Mash bean curd finely
- Mash fish meat, mix well with salt
and egg white.
- Add bean curd and A and mix thoroughly.
- Steam the mixture in a container for
20 minutes. Cool.
- Cut into strips, the size of fish fingers.
- Coat the top surface thinly with egg
and flour mixture
- Place minced walnut and ham over strips.
- Coat each stick with corn flour, to prevent the walnut and
ham pieces from loosening.

Heat oil to fry the fritters till brown and crispy,
1 minute for each stick.

Garnish and serve hot with your favorite sauces,
curried mayonnaise,
chili sauces,

Serve 3, cook time 10 minute

Ingredients and method
3 pieces soft tofu, using a spoon to slightly dent
a hole in the
centre for stuffing purpose.
- 50 prawns, chopped finely (optional)
- 50 g fish meat, use blender to blend
- 100 g minced pork
- 1 tsp chili powder
- salt and pepper to taste
- 2 tbsp
soy sauce
- 1 tbsp
corn flour
- corn flour mixture made from 3 tbsp
wheat flour,1 tbsp corn flour and 3
tbsp water
Mix the above ingredients evenly.
Divide into 3 portions.
Stuff each piece of tofu with 1 portion of the mixture.
Coat with batter all over.
- 1/2cup of chicken stock soup
- 1 tsp chili sauce
- 1 tbsp
soy sauce
- 1/2 tsp chili sauce
- 2 tbsp oil
Method
- Heat enough oil. Carefully add in
stuffed bean curd. (meat side down to avoid separation). Fry till golden.
- Turn and brown the other side.
- Dish out. Leave 1/2 tbsp oil in the wok.
- Add the chicken stock mixture till boil.
- Put the liquid mixture at base of a plate
to serve as sauce.
- Place
the stuffed tofu on top of the sauce.
- Garnish and serve hot.
Braised tofu Cook time 6 minutes, serve 3

| Ingredients |

3 pieces tofu, halved into triangular shape |

mushroom, soaked overnight, halved |

2 pips garlic, chopped finely |

1 stalk spring onion, cut into 1 inch length |

A : (1/2 cup chicken stock |

2 tbsp
soy sauce |
| |
1/2 sesame oil |

corn flour mixture |
Method
- Heat 2 tbsp oil in wok. Fry tofu till golden.
Dish out and
drain dry.
- With the remaining oil, fry the garlic, and
mushrooms till
fragrant.
- Add tofu. Add A. Simmer over medium fire
till liquid is
halved. 2 minutes
- Add corn flour water to thicken.
- Garnish with chili and spring onions
